WILD LOT DISTILLERY

is a small farm-based distillery in Karridale, at the southern end of the Margaret River region.

Focused on small-batch spirits, regional produce and relaxed hospitality, Wild Lot brings together distilling, agriculture and good company in a distinctly regional WA setting.

Part distillery, part cellar door and part ongoing project — we’re building something intentionally hands-on, a little rough around the edges and always evolving.

HOW IT STARTED

Wild Lot Distillery was years in the making.

After working across hospitality, wine and distilling during a period of rapid growth in the Australian spirits industry, Bec left her role with the intention of building a distillery of her own.

Not long after came the realities of starting a family, developing a rural property, navigating licensing and approvals, and building the infrastructure needed to make it happen properly.

Seven years after purchasing the property that would become Wild Lot Distillery, the doors opened.

Today, Wild Lot remains intentionally hands-on and small batch — shaped by regional produce, practical thinking, good hospitality and a genuine connection to the land around us.

Bec de Burgh - Distiller | Founder
Rebecca de Burgh
Professional Overthinker & Collector of Half-Finished Projects
Growing up in pubs and after years working across hospitality, wine and distilling, Bec eventually decided the only sensible thing to do was start her own distillery from scratch in regional WA.

Equal parts creative and chaotic, she now spends her time developing spirits, growing botanicals, managing branding, juggling regulations and adding new ideas to the list faster than they can realistically be completed.

Slade de Burgh - Wild Lot Distillery
Slade de Burgh
Professional Problem Solver & Chief Reality Check

Balancing FIFO life, family and distillery projects, Slade brings practical thinking and a calm head to the chaos of running a rural distillery.

If something breaks, leaks, jams or suddenly becomes “urgent,” chances are he’s already fixing it.

Usually found building, troubleshooting or quietly shaking his head at another one of Bec’s ideas — ideally while asking if he can knock off early.

LOOKING AHEAD

Wild Lot is still growing, and probably always will be.

We’re continuing to slowly expand both the distillery and the experiences around it — from new spirit releases and seasonal produce through to tastings, events and collaborations that celebrate regional Western Australia.

Our focus remains simple:
make good spirits, welcome people well, and build something worth sharing.

THOUGHTFUL BY NATURE

From refill programs and compostable packaging through to water reuse and locally grown botanicals, sustainability plays a practical role in how we continue building Wild Lot.
