As we inch closer to opening our doors, navigating the final stages of licensing and setup, we’re not just waiting; we’re actively shaping a sustainable future for our distillery and the wider industry.
Innovation is at the heart of Wild Lot Distillery. Even before our first batch is distilled, we’re exploring concepts that promise to redefine the craft and its impact on the planet. We are participating in the prestigious CSIRO Innovate to Grow program, which supports our commitment to pioneering sustainable distilling technologies.
In addition to this, we are thrilled to be working with a talented cohort of students from Victoria University. These students are conducting in-depth research into key areas such as sustainable packaging solutions, renewable energy pathways, and water management innovations. Their work is helping us identify cutting-edge solutions to reduce our environmental footprint and create a more sustainable model for the distillery. Through their analysis of market trends and educational tourism opportunities, they are also assisting in shaping Wild Lot Distillery as a destination for learning and discovery.
While the specifics of our projects are under wraps, we can share that these collaborations are providing us with valuable insights, ensuring that our sustainability initiatives are both scientifically sound and potentially transformative for the industry.
Stay tuned for more updates as we progress toward our launch. At Wild Lot Distillery, we are committed to crafting not just exceptional spirits, but a better future for our community and the environment.
Cheers, Bec
